Mixed fruit salad
Ingredients:
1 kiwi
1 orange
1 mango
100g watermelon
1 plum
50g pineapple
2 mint leaves
1 red cherry
200ml sugar syrup
Method:
To prepare the sugar syrup, add 600g of sugar to 1 litre water and boil. Refrigerate for an hour. Cut all the fruits in cube shapes and mix with the sugar syrup.
Mango prawn salad
Ingredients:
150g ripe mango
100g poached prawn (cube cut)
15g coriander leaves (chopped)
5g green chilli (chopped)
10ml corn oil
Juice of 1 lemon
5g salt
3 half-mango shells
Method:
Put all the ingredients in a bowl and mix well. Put the mixture in mango shells.
Pineapple chaat
Ingredients:
200g ripe pineapples (cube cut)
15g coriander leaves (chopped)
5g red chillies (chopped)
3g chat masala
5g sugar (optional)
20ml corn oil
3g salt
1 pineapple shell
Method:
Put all the ingredients in a bowl and mix well. Now place the mixture in a pineapple shell; garnish it before serving.
Ripe papaya salad
Ingredients:
220g ripe papaya (cube cut)
10g coriander leaves (chopped)
5g green chillies (chopped)
Juice of 1 lemon
20ml corn oil
5g salt
Method:
Put all the ingredients in a bowl and mix well. Serve in it a half-cut papaya shell (optional), then garnish and serve.
Mixed fruit cocktail
Ingredients:
50g pineapple (dice cut)
50g watermelon (dice cut)
50g papaya (dice cut)
50g mango (dice cut)
20g grapes (dice cut)
50g mayonnaise
20g tomato ketchup
3ml Tabasco sauce
Salt to taste
Method:
Put mayonnaise, ketchup and Tabasco sauce in a bowl. Whisk it very well. Now add the fruits to the sauce and mix them all. Garnish and serve the cocktail.
Rice noodles with watermelon
Ingredients:
100g rice noodles (cooked)
100g watermelon (cube cut)
20g spring onions
10g coriander leaves
3g green chillies
Juice of 1 lemon
20ml corn oil
30ml sweet chilli sauce
Salt to taste
Method:
Put all the ingredients in a bowl and mix well. Now garnish and serve the dish.
Tropicana pancake with mixed fruits
Ingredients for pancake:
3 eggs
500ml milk
500g sugar
200g flour
25g butter
A pinch of salt
1 grated orange peel
Ingredient for pastry cream:
500ml milk
200g pastry cream powder (mix milk and pastry cream powder and whisk for around 10 minutes)
Method:
Mix the eggs, milk and sugar in a mixing bowl and whisk. Now add flour, salt and grated orange peel. Lastly mix melted butter. Now fry it a little in a frying pan without oil.
Mixed fruit mocktail
Servings: 2
Time taken: 15-30 minutes
Making time: 15 minutes
Makes: 4 glasses
Ingredients:
2 cups mixed fruit chopped in chunks (green grapes, papaya, mango, pineapple, watermelon, apples, etc.)
1/3 cup sugar
1 or 2 drops ice cream essence
1 or 2 drops orange food colour
3-4 cups crushed ice
Salt to taste
Pepper to taste
Method:
Add 1 cup water to the chopped fruit. Bring to a boil and simmer for 2 minutes. Add sugar after removing from the fire. Cool to room temperature and blend in a mixer till smooth. Strain pulp through a colander. Add essence, colour, ice, salt and pepper.
Beat with an electric beater till frothy. Serve in glasses. Note that soft fruits like papaya, mango, watermelon and orange do not need to be boiled.
