Khazana Nawabi Food Festival
From 10 to 30 September, Indian fine dining restaurant Khazana will be celebrating Royal cuisine at their Gulshan branch.
India is a vast country, and therefore comprises a plethora of flavours. Khazana is trying its best to provide its customers an insight into the exquisite flavours of India a step at a time, and the Nawabi Food Festival is a part of that journey.
Nawabi cuisine is an extremely delicate cuisine with precise measurements for each ingredient, meticulously prepared to obtain the authentic royal flavour. Traditionally, this cuisine is known as “Awadhi” cuisine, the namesake being Awadh, formerly a province of the Mughal Empire. And it's no secret how much our forefathers the Mughals enjoyed their meat, cooked thoroughly in oil, ghee and spices!
Coincidentally, Kamal Waris, Executive Chef of Khazana, comes from a long line of chefs specialising in this cuisine. Born and brought up in Lucknow, he has inherited his culinary skills from Nawabi Gharana and is therefore extremely familiar with the flavours.
Each dish that has been picked for Khazana's Nawabi menu has its own story to tell. For example, the Gosht Kakuri Kabab, a soft lamb kabab that melts in your mouth, was originally created for an aged nawab who didn't have any teeth but still wanted to eat kababs. Some of the other scrumptious items on the special Food Festival menu of around 15 dishes are Jugalbandi Kabab, Gobi Mussallum, Nawabi Jheenga, Gosht Badam Quorma and Begum Pudding.
Khazana promises authentic Indian cuisine, using high quality ingredients and cuisine-specific utensils in a hygienic environment. The Nawabi Food Festival has been introduced in response to the requests of loyal customers to bring some variety into the menu. Khazana hopes to explore other Indian specialty cuisines through similar festivals in the future.
The Nawabi menu will be available a-la-carte alongside the regular lunch and dinner menus of Khazana for the duration of September.
